I think he means that what we think of as a tomato is not what the product actually is

Well, Mrs. V, I think it means that even though the tomato grows in one season now we grow it all year 'round.

"the idea of a tomato" I think he means that what the producers do is not natural, obviously. They use chemicals to ripen them.

The factories are good for taking care of the animals before they are slaughtered and used for meat. They supply us with food.
